Sunday dinner for a change

Cooked a Sunday roast today for a change. My girls had asked me. So, we bought a free-range chicken and all the other ingredients yesterday.

Pleased that the chicken was tasty. Yes, the meat is much better than battery chicken. Even I can tell the difference! And roasted potatoes were one of the best I've ever made, due to the incident that I accidentally boiled the potatoes much longer than usual before putting in the oven. (Yes, I'm a silly cook. If you want to have a laugh, just come to my kitchen and watch me cook!!) My girls ate a lot and I agree with them saying that it was one of the best roast dinner we've ever had.

After the dinner, instead of throwing away the carcass, threw it in a pan and boiled it to make chicken stock for tonight's tea. Will make chicken and noodle soup. The colour of the stock is much darker than usual, thanks to the roasting. Smells nice, too. Forgot to take a lemon out of the carcass (silly me again!), but the stock tasted alright. Pleased with myself that I didn't waste anything.

Now am really wondering what to do with other meat. There is not much organic meat being sold in my area. All I found was minced beef in a supermarket. And don't see cows and sheep in the fields in winter even though the weather is good. No good that they can't go out regularly during winter, surely. Not just for physical health but also for mental health. Not sure what to do. Not ready to become a proper vegetarian yet. Maybe will eat meat less often.
